Brown mustard is the middle child of the mustard family: not as common and mellow as yellow mustard seeds, but less pungent and more used than black mustard seeds. Mustard seeds play an important role in cuisines all over the world, both whole and ground. Whole, they are commonly used in pickling recipes and for seasoning corned beef and vegetables in Europe, but are also used in curries throughout the whole Indian subcontinent. Brown mustard seeds are also used in the preparation of both Dijon and spicy brown mustard. Naturally vegan and gluten-free.
