Description

Hen of the Woods (Grifola frondosa), widely known as maitake (aka dancing mushroom) or the sheep’s head mushroom, is a choice edible and medicinal fungus that grows in large, clustered, overlapping fronds resembling a roosting hen at the base of old growth oaks or maples. It is widely sought after by foragers due to its rich, earthy umami flavor and dense, meat-like texture. Native to China, Europe, and North America, it is widely used in East Asian cuisine and Chinese medicine.
Dehydrated Maitake can be added as is to soups and stews and left to simmer, or rehydrated for 15 minutes in hot water before using for stir-fries, pasta, risotto, and more. You can also grind them from dry to make vegan bouillon. One bag of dried mushroom is equivalent to around 5 oz of fresh mushrooms.
Our Maitake was inoculated and then harvested in New Hampshire. Naturally vegan and gluten-free.
