Description
Chicken of the woods (Laetiporus sulphureus) is a choice edible bracket fungus known for its vibrant orange-and-yellow color and shelf-like clusters growing on dead or dying hardwoods. Named for its chicken-like texture and mild flavor, it is widely sought after by foragers from late spring to autumn, due to its rich, earthy umami flavor and dense, meat-like texture. Dehydrated Chicken of the Woods can be added as is to soups and stews and left to simmer, or rehydrated for 15 minutes in hot water before using for stir-fries, pasta, risotto, and more. You can also grind them from dry to make vegan bouillon. One bag of dried mushroom is equivalent to around 5 oz of fresh mushrooms.
Our Chicken of the Woods was inoculated and then harvested in New Hampshire. Naturally vegan and gluten-free.
