Indian bay leaves are not at all related to European laurel bay leaves, but are in fact closely related to the cinnamon tree. Also known as Tej Patta in Hindi, Indian bay leaves are a commonly used spice in Indian and South Asian cuisines. They have a distinctive fragrance and a warm, slightly sweet, clove-like flavor with hints of cinnamon. Visually, the leaves are green and oval-shaped, with a smooth surface and a distinctive vein running down the center, and they are double to triple the size of regular bay leaves. They are used in a variety of dishes like curries, soups, and stews, including biryani, dal, chicken tikka masala, and Kerala sweet dumplings. Much like laurel bay leaves, Indian bay leaves are particularly well-suited to dishes that are slow-cooked, as their flavor will intensify over time. Add them whole straight to the pot and remove from the dish before serving. This spice has been used for both culinary and medicinal purposes since the medieval times and it’s a must-have for authentic-tasting Indian cuisine. Also try them for simple bone or vegetable broth, they add a depth of flavor that is reminiscent of ramen and pho.
