Za’atar is a renowned Middle Eastern seasoning, a blend of sumac, thyme, sesame seeds, oregano, salt, and other spices, with both herbaceous and tart notes. Extremely versatile, it can be used both as a dry rub – it pairs particularly well with chicken and fish due to its lemony flavor, but it goes well on everything from lamb to roasted veggies, and as a finisher.
