Sumac is made by grinding and sieving the deep brick-red berries of the sumac bush, or “staghorn sumac,” and is ideal for adding a tart, lemony flavor to any recipe. Its zesty flavor profile gives all the flavor of citrus without the acidic nature; where some cultures might use vinegar or lemon juice, sumac is instead the go-to option in Middle Eastern cuisines to add brightness to any dish. Sumac is typically used in spice rubs, such as za’atar, or added to tabbouleh salads. It works really well for delicate proteins such as chicken and fish, but is also used to add zestiness to meats with a more intense flavor, such as lamb. Sumac is a great ingredient for dips and sauces, either hummus, yogurt, or cheese-based. Contains 2% salt, to accentuate flavor and prevent clumping. Naturally vegan and gluten-free.
