Description
Matcha is a particular type of powdered green tea which is traditionally used for tea ceremony in Japan, as well as an ingredient and natural dye for baking. This USDA-certified organic matcha is classified as cerimonial grade, meaning that its made from 100% powdered shade-grown green tea leaves, without any additives or dyes, thus being pure enough to be used for tea ceremonies in Buddhist temples. Since it is shade-grown, matcha contains more caffeine and free amino-acids, including theanine, than most types of teas, and it is told to have mood and metabolism enhancing properties. The flavor can be a bit bitter to the uninitiated, and makes for a very full bodied cup of tea, with a strong preponderant vegetal note followed by a subtler, sweeter aftertaste. When used as an ingredient for other preparations, it mellows out to resemble a more traditional green tea flavor. Use it for matcha lattes, cookies, muffins and cakes. It pairs particularly well with pistachios and raspberries. Naturally vegan and gluten-free, contains caffeine.
Steep 1 tsp of matcha powder per each 8 oz of water (you can sieve the powder beforehand as in the traditional tea ceremony) at 160 – 180 °F for up to 3 minutes. Whisk continuously, until all the powder has dissolved.
