Description
Lemongrass is a tall, perennial grass native to the tropical regions of South East Asia and Africa. The long leaves of lemongrass contain rich, lemon-like oil that is released through the cooking process, and can also be distilled to get lemongrass essential oil. This spice has a predominant lemony flavor with just a touch of ginger, and is a common ingredient in Thai and Indian cuisine. It is often paired with kaffir lime leaves, galangal, ginger and Thai chile powder. Use small cut lemongrass as you would bay leaves: add them to soups, stews and curry for the leaves to infuse their aroma into the liquid, and then remove them before eating. The leaves can also be added to loose-leaf teas and herbal infusions, or just simple hot water, for a purifying beverage. Also a good addition to bone broth. Naturally vegan and gluten-free.
