Used extensively in quintessential Korean dishes such as bulgogi or kimchi, gochugaru chile flakes have a tart and savory note, with just enough heat to give most dishes a slight kick, comparable to Aleppo pepper on the Scoville scale. It is a great flavor that would compliment many dishes. Try it on classics like tofu or cabbage, but also to something as simple as scrambled eggs for an unexpected touch.
