Grains of paradise (also known as melegueta, alligator, or guinea pepper) are a spice native to the West coast of Africa. Very popular in medieval courts, where they were used to brew gin and aquavit as well as a to season food, they have recently enjoyed a resurgence. They have a complex peppery flavor with notes of citrus that goes very well with herbal distillates and fruit. Use it as a gourmet substitute for black peppercorns in any dish, or in herbal simple syrups for cocktails and desserts. Naturally vegan and gluten-free.
