Widely used in Mexican and Southwestern cuisine, Ancho chiles are part of the trinity of mole chiles (together with Guajillo and Pasilla chiles) and are a fundamental ingredient for pozole, salsa, mole sauces, and more. A great starting point to build up your heat tolerance, Ancho chiles are usually enjoyed even by people who aren’t very fond of spicy foods. For maximum flavor dry toast chiles in a hot skillet until fragrant or in a 350° oven until puffy and fragrant. Rinse with warm water and soak for 10 minutes to rehydrate or add directly to recipe that will cook for at least 10 minutes. Naturally vegan and gluten-free.
