Vadouvan is an interpretation of Indian masala with distinctive French influences, combining the classic curry spices of mustard seeds, fenugreek, cumin, coriander, cardamom, and spicy chiles with Western ingredients such as garlic, onion, and shallot. This curry powder originated in the southern Indian region of Pondicherry, which was intermittently governed as a French colony, and the mix of traditional and foreign spices produced a mild, sweet-smelling curry powder, which has become very popular in the West. A good introduction to curry, and one of our most popular ones.
