Description
Long pepper is a very ancient spice – it was used by the Greeks and the Romans even before black pepper. It is a variety of pepper that grows in long spikes, and has a hotter and more complex flavor than regular black pepper, with undertones of cardamom, nutmeg, allspice, and pine. Grind it as you would regular pepper to add heat and mild, musky sweet notes to to veggies and proteins. Nowadays, long pepper is found mostly in Indian and Nepalese recipes, especially in stews, dals, and pickles. Also found in some North African spice mixtures, and in Indonesian and Malaysian cooking.
