Description
Used prominently in Mediterranean cuisine, rosemary goes well with pork, lamb, poultry dishes, fish, and vegetable dishes alike. Together with thyme, it’s one of the so-called hardy herbs that can withstand high cooking temperatures and/or long cooking times without wilting, and it therefore great for roasting, grilling, or braising meats and root vegetables. Its slightly sweet, resinous, highly aromatic flavor makes it so it can also be used in baking, to introduce a sweet herbal note in desserts and syrups alike, such as for example in lemon and rosemary muffins or shortbreads.
