Description
Also known as anchiote in Spanish-speaking countries and coloral in Brazil, annatto is used mostly in Mexican and Caribbean cooking to impart a rich yellow/orange coloring to foods. It is a good substitute to achieve the rich color of saffron for homemade pasta or in a risotto, and can also be used as a dye for natural fabrics. It is also a common ingredient in dry rubs, both for color and flavor. Naturally vegan and gluten-free.
